Rosh Hashana Honey Cookies

For Rosh Hashana this year, I wanted to make something with a lovely honey flavor that would be portable enough to take to my various meals. I found this amazing (and super-easy) recipe and made them last night in just 1 hour, including baking time and clean-up. They’re kind of like large gooey honey grahams, and they use only one bowl for prep. What honey-themed desserts are you making this year?
Honey Cookies

2 cups sugar
2 eggs
1/2 cup honey
4 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 tsp vanilla extract
4 cups unbleached white flour
Turbinado sugar for rollingPreheat oven to 375 degrees F.
In a mixing bowl stir together oil, sugar, eggs, honey, baking soda, salt, cinnamon and vanilla. Mix well, then stir in the flour until just incorporated.
Shape the cookies into balls about 1 inch in diameter and roll them in Turbinado sugar. Place 2 ½ inches apart on parchment lined cookie sheets and bake for 11 minutes. They should be nice and golden, a little brown on the edges.
Makes 4 dozen.
